Recipe

Beef Vegetable Soup
from Denise Wirtz (TCH customer and locally grown supporter)

I want to credit all vendors from whom I purchased every single ingredient in this soup. This recipe makes a large pot and serves appx 8-12 (for our house, that’s three nights of dinners).

1 lb lean (very lean) ground beef Indian Creek
1 med red onion, diced Hog Mountain Farm
1 rib celery, diced
1 tsp salt

6-7 large tomatoes, washed, seeded, and diced Hog Mountain Farm and Weedy Soil Farm
appx 1 lb green Pok choi, washed (stalks diced, leaves cut into appx 1" pcs) Heirloom Gardens
small bunch of baby carrots (appx 10-12), washed and chopped Heirloom Gardens
2 ribs celery, diced
small bunch green onion, cleaned and diced Heirloom Gardens
3-4 med-large sunchokes, washed and coarsely chopped Weedy Soil Farm
handful fresh parsley, minced Heirloom Gardens
salt/pepper to taste
water

Brown beef with red onion, celery, and salt until no pink remains. Do not drain (the runoff will be the foundation for the semi-consomme base of the soup).

In a very large pot, combine the meat blend (and all juices) with all the chopped vegetables and parsley. Add salt and pepper to taste. Add just enough water to cover meat and vegetables. Bring to a boil, then reduce heat to medium-low and simmer for 40 minutes.

If desired, serve with lightly buttered bread or crackers.

GREEN PASTURE GROUP ORDER Cod Liver Oil and Coconut Oil – I’m taking orders now for Green Pasture products. If you would like to order please send me an email with the item name and quantity. I’ll place this order on Monday October 28th. Check out the Green Pasture website to see what’s available.

RAW MILK – you may order on Sunday or Monday for pick up on Wednesday or Saturday. If you are ordering ahead to pick up on Saturday you’ll need to pre-pay through your stripe account and understand that your milk will be 3 days old. From my experience his milk is usually good for at least 7 days. Please write a note on your order if you are picking up on Saturday.

Note: All Raw Milk Products are labeled “For Pet Consumption Only”. This is in accordance with the regulations of the Department of Agriculture for the State of Georgia. This is the only way Raw Milk can legally be sold in the state of Georgia.

GLASS JARS Sam sells milk in 1/2 gallon jugs for $4.40 each. He will also sell in glass Mason jars provided you provide the jars. Milk in glass will be $3.30 each 1/2 gallon. You will need 6 jars with metal flat lid and plastic screw lid (plastic doesn’t rust). I’ve purchased some cases and lids that you can buy for $15 (6 jars and 6 lids).

NEW TO THE MARKET?
Here’s some tips to help you have the best experience when ordering online.
1. ORDER EARLY (Don’t wait for this email to place your order!!)
2. COMPLETE YOUR ORDER…you can lose an item in your cart if someone else orders and completes the order ahead of you.
3. LOOK FOR A CONFIRMATION EMAIL…if you don’t receive an email showing your completed order, your order was not placed and you’ll need to place it again.
4. MULTIPLE ORDERS…placing multiple orders aren’t a problem, they will be grouped together on our order form with one total.
5. ARRIVE EARLY TO PICK UP…We usually have extras from various farmers/vendors and maybe a Farmer of the Day. Arrive at 10am for a better selection and less wait time.
6. BRING GROCERY BAGS…Don’t forget to bring your reusable grocery bags to pack your order.
7. EMAIL THE GROWER…each farmer lists their own products and tries to make the listings as clear as possible so that you know what you are buying, but sometimes it may need more explanation. You are buying directly from the farmer/vendor and they are more than happy to speak to you to answer any questions.

LOCATION & PICK-UP
Building 106, Colony Park Dr. in the Basement of Suite 100, Cumming, GA 30040. Pick up every Saturday between 10-12pm.
