Recipe

Easy Eggplant Bolognese

4 tablespoons bacon fat or coconut oil (I highly recommend using bacon fat for awesome flavor!)
2 medium sized Italian eggplants peeled and cubed (approximately 3-4 cups)
1 red bell pepper cut into bite size pieces
1 small red onion, sliced
1 pound ground beef
1 pound ground pork
1 teaspoon sea salt + more to taste
2 tablespoons red wine (you can sub with balsamic vinegar if you like)
3-4 garlic cloves minced
1 1/2 cups tomato sauce
1 tablespoon dried oregano
Black pepper to taste

1. In a large soup pot, heat 2 tablespoons of the bacon fat over medium heat. Add the eggplant and saute until tender, approximately 5-8 minutes.

2. Remove the eggplant from the pan and set aside.

3. Add the remaining 2 tablespoons of bacon fat to the pot and saute the bell peppers and onions until tender, about another 5-8 minutes. Remove the peppers and onions from the pot and set aside as well.

4. Crumble the ground pork and ground beef into the pot and brown. Add the teaspoon of salt and stir.

5. Add the red wine and garlic and bring to a simmer. Stir the simmering meat and wine until the alcohol smell starts to subside.

6. Add the eggplant, peppers, and onions back to the pan with the meat, pour in the tomato sauce, add the oregano, and some black pepper and bring to a simmer.

7. Taste and season with more sea salt if desired.

8. Serve in bowls and enjoy!

9. Feel free to serve over sauteed or steamed veggies of your choice like zucchini, broccolini, julienned carrots, kale, etc.

Welcome to our NEW Wednesday Market!
We are experimenting this week with timing and the schedule and it’s very possible that adjustments in times may change. Thank you for being patient as we work through the logistics.

Sam Jones is a dairyman from Butler, GA. He is familiar with Weston A Price diet guidelines, leaky gut issues, Celiac disease. His cows roam on organic pastures of a 1200 acre organic farm. He has a closed herd, which means he has whole families of cows and knows the genealogy as well as the genetics of each individual. He feeds a GMO- Free grain at milking time and the amount of grain each cow receives depends on their body condition at milking. Sam explained that the need for cows to have some grain has been bred into cows. If they are suddenly prohibited from having any grain at all, they will starve themselves to death – mostly they survive on grasses, but man introduced grains to increase milk production.

In an effort to correct this unfortunate reality, Sam is working with Dairymen in New Zealand where there exist closed herds that have never been fed any grains. Since he inseminates his cows, he is able to purchase semen from New Zealand in an effort to achieve the goal of having a herd that does not need grain to survive, but will in fact, thrive on a diet of pasture grasses. At the present time, Sam has bred 3 or 4 generations toward this optimum objective.

Sam does have his cows tested and all but one have the A2 gene and are “A2 cows”! Sam is a consultant for Farmers in Georgia and the surrounding states for purchase of Dairy cows, the breeding of Dairy cows and pasture management. His “hobby” is cow genetics!

Sam does not vaccinate, he has his cows tested regularly, has his milk tested regularly and has a reputation with the Dept of Ag for having exceptionally excellent results. He does not use antibiotics unless it is absolutely necessary and the milk is not incorporated with the batch until it tests negative.

Cedar Rock, his Farm near Madison, Georgia is home to his beef cattle, which are Longhorns! His Dairy herd roams his 1200 acre Organic farm in Butler, Georgia.

Note: All Raw Milk Products are labeled “For Pet Consumption Only”. This is in accordance with the regulations of the Department of Agriculture for the State of Georgia. This is the only way Raw Milk can legally be sold in the state of Georgia.

Sam sells milk in 1/2 gallon jugs for $4.40 each. He will also sell in glass Mason jars but this system needs to be worked out once we find out how many of you want to get your milk in glass.

Recipe

Some highlights are…

Secret Garden Soap Labor Day Special! 20% off regular price. This is a grab bag of assorted soaps. The scents are soapmaker’s choice, and the bars are of different sizes, but each bag will contain 16 oz. of handmade all vegetable oil soap. What a great way to sample handmade soap at a discount as you help me empty my shelves before holiday soapmaking. Contains olive, palm and coconut oils, distilled water, shea butter, sodium hydroxide, stearic acid, color and fragrance.

Lobster Stock

Market News

Please welcome Atlantic Express Seafood to the market. They sell sustainably caught Maine lobster and ship it down to sell next day at various markets here in Cumming. I’m choosing to offer lobster because it’s being sold by the fisherman who owns the boat, they are certified sustainable, and not only is it considered a high vitamin shell fish it also can create a great lobster stock (recipe above).

This is an excerpt from the Weston Price website…Lobster is similar to crab, namely, its fat soluble activators will be found in the fatty organs. Weston Price described Maori school children who “gave very little evidence of having active dental caries. I asked the teacher what the children brought from their homes to eat at their midday lunch, since most of them had to come too great a distance to return at noon. I was told that they brought no lunch but that when school was dismissed at noon the children rushed for the beach where, while part of the group prepared bonfires, the others stripped and dived into the sea, and brought up a large species of lobster. The lobsters were promptly roasted on the coals and devoured with great relish.” The process of roasting on coals may have been a common way indigenous groups prepared crab as well.

Groups living off the islands of Australia, whose diet consisted of a liberal supply of shellfish, also ate “a variety of plant roots and greens, together with fruits.” I suggest these foods as a vital combination to be eaten with the crab to help provide balance.

Wholesome Country Farm has listed beef this week, here’s what Julie has to say…Although all of our cuts are great tasting a favorite of mine and popular with most folks is our premium cuts lean ground beef. We also have cube steak, another favorite. And, all the other cuts, beef short ribs, t-bone, rib eye, sirloin, as well as liver, ground beef heart, beef shank, soup bones, and assorted roast cuts. We will be ramping up postings of beef cuts over the next few weeks, for this week, we have hamburger, steaks, liver, tongue and cube steaks posted.

Goat Cheese and Spinach Turkey Burgers

1 1/2 pounds ground turkey breast (Heritage Farm)
1 cup chopped spinach, lightly sauteed till wilted
2 tablespoons goat cheese, crumbled (Coles Lake Creamery)

Directions
Preheat the oven broiler.
In a medium bowl, mix ground turkey, spinach, and goat cheese. Form the mixture into 4 patties.
Arrange patties on a broiler pan, and place in the center of the preheated oven 15 minutes, or until done.

Welcome Andi’s Way to The Cumming Harvest. Andi’s Way is a local grower of organic wheatgrass, sunflower greens (sprouts) and pea greens (sprouts).

HAPPY ANNIVERSARY!

Today marks our 3 year anniversary. Three years ago I had an idea to open an online organic farmers market in Cumming because I wanted an easier more convenient way to shop for “REAL” food for my family. Not sure it would be something farmers would be interested in I approached Lynn Pugh of Cane Creek Farm and so glad I did. She spent the first two years sponsoring the market and teaching me about farmers. She was the only organic farmers that I knew of and I needed to see if there may be others that would like this option of selling. She was excited to have someone interested in starting it and liked the idea of selling in this way. So with just a few local farmers and a handful of customers we had our first Saturday market on August 6th, at the old Autism Center on Hwy 9, out of the back of my van. Thanks to all of you, your support from the beginning, the farmers and their hard work, and our great volunteers, we have grown and I’m happy to say we are still growing. I couldn’t have done this without all of you!

To celebrate and show our appreciation, we’re going to have special goodies for you this Saturday. Coffee from Yonah Coffee, soap samples from Secret Garden, mini galettes from Farm Fresh Foods, mini muffins from My Daily Bread, jam/jelly from Simply Southard and more.

NEW TO THE MARKET?
Here’s some tips to help you have the best experience when ordering online.
1. ORDER EARLY…the market opens at 8am every Wednesday, popular items will sell out quickly. (Don’t wait for this email to place your order!!)
2. COMPLETE YOUR ORDER…you can lose an item in your cart if someone else orders and completes the order ahead of you.
3. LOOK FOR A CONFIRMATION EMAIL…if you don’t receive an email showing your completed order, your order was not placed and you’ll need to place it again.
4. MULTIPLE ORDERS…placing multiple orders aren’t a problem, they will be grouped together on our order form with one total.
5. ARRIVE EARLY TO PICK UP…We usually have extras from various farmers/vendors and maybe a Farmer of the Day. Arrive at 10am for a better selection and less wait time.
6. BRING GROCERY BAGS…Don’t forget to bring your reusable grocery bags to pack your order.
