Recipe

Beef Stroganoff
from Denise Wirtz (TCH customer and locally grown supporter)

Ingredients:
1 lb ground beef (I prefer sirloin)
1 1/2-2 cups fresh cream of mushroom soup (recipe follows)
1 large yellow onion, diced fine
8 oz sour cream
1/4 cup fresh chopped oregano (or 2 Tb dry)
Egg noodles (cook per package directions, or make fresh)
Salt & pepper as desired.

Instructions:
Brown ground meat with diced onions. Drain — reserving the runoff for use in the cream of mushroom soup, if using fresh. Cover and set aside.

To make cream of mushroom soup, you will need 4 Tb salted butter, 1/4 cup of flour (I prefer the spelt flour from My Daily Bread, but you can use any whole grain flour), about 1/2-3/4 cup of whole milk or cream, and either beef runoff from your browned meat or a cup or so of beef broth, and between 1/2-3/4 pound mushrooms cleaned and finely chopped. Melt butter in a medium saucepan over medium-low heat and add flour…do not brown. Just stir until butter and flour are incorporated and thick. Add beef runoff (or broth) gradually, stirring constantly. Add milk (or cream) slowly, again stirring constantly until the soup is desired texture. Remove from heat and add chopped mushrooms. Salt and pepper, if desired. Voila ~ cream of mushroom soup! :-)

Stir cream of mushroom soup into the meat/onion mixture, and stir in sour cream. When fully incorporated, stir in oregano. Meanwhile, cook noodles per package directions and drain. Mix meat/soup mixture with noodles, and bring to medium heat just long enough to fully heat through. Add salt and pepper if desired.

Serves approx 4-5

Market News

RAW MILK – you may order on Sunday or Monday for pick up on Wednesday or Saturday. If you are ordering ahead to pick up on Saturday you’ll need to pre-pay through your stripe account and understand that your milk will be 3 days old. From my experience his milk is usually good for at least 7 days. Please write a note on your order if you are picking up on Saturday.

Note: All Raw Milk Products are labeled “For Pet Consumption Only”. This is in accordance with the regulations of the Department of Agriculture for the State of Georgia. This is the only way Raw Milk can legally be sold in the state of Georgia.

GLASS JARS Sam sells milk in 1/2 gallon jugs for $4.40 each. He will also sell in glass Mason jars provided you provide the jars. Milk in glass will be $3.30 each 1/2 gallon. You will need 6 jars with metal flat lid and plastic screw lid (plastic doesn’t rust). I’ve purchased some cases and lids that you can buy for $15 (6 jars and 6 lids).

Here’s some tips to help you have the best experience when ordering online.
1. ORDER EARLY (Don’t wait for this email to place your order!!)
2. COMPLETE YOUR ORDER…you can lose an item in your cart if someone else orders and completes the order ahead of you.
3. LOOK FOR A CONFIRMATION EMAIL…if you don’t receive an email showing your completed order, your order was not placed and you’ll need to place it again.
4. MULTIPLE ORDERS…placing multiple orders aren’t a problem, they will be grouped together on our order form with one total.
5. ARRIVE EARLY TO PICK UP…We usually have extras from various farmers/vendors and maybe a Farmer of the Day. Arrive at 10am for a better selection and less wait time.
6. BRING GROCERY BAGS…Don’t forget to bring your reusable grocery bags to pack your order.
7. EMAIL THE GROWER…each farmer lists their own products and tries to make the listings as clear as possible so that you know what you are buying, but sometimes it may need more explanation. You are buying directly from the farmer/vendor and they are more than happy to speak to you to answer any questions.
