Brussels Sprout Hash

A long time customer and friend posted this recipe that I have to share with you. Below is the original recipe with her own suggested changes.

Ingredients

6 tablespoons (3/4 stick) butter, divided or fry 4-5 slices of bacon until crisp. Remove from drippings and pour off all but about 1-2 tbsp to saute the onions and garlic.
1/2 pound shallots, thinly sliced or substitute sweet onion and garlic
Optional seasoning add Italian Seasoning blend and hot pepper to taste
Coarse kosher salt
2 tablespoons apple cider vinegar
4 teaspoons sugar (she removes this since she’s added carrots at the end)
1 1/2 pounds brussels sprouts, trimmed
3 tablespoons extra-virgin olive oil
1 cup water and optional shredded carrot about 1 cup
Crumble the bacon strips and add them before serving.

Preparation

Melt 3 tablespoons butter in medium skillet over medium heat. Add shallots; sprinkle with coarse kosher salt and pepper. Sauté until soft and golden, about 10 minutes. Add vinegar and sugar. Stir until brown and glazed, about 3 minutes.

Half brussels sprouts lengthwise. Cut lengthwise into thin (1/8-inch) slices. Heat oil in large skillet over medium-high heat. Add sprouts; sprinkle with salt and pepper. Sauté until brown at edges, 6 minutes. Add 1 cup water and 3 tablespoons butter. Sauté until most of water evaporates and sprouts are tender but still bright green, 3 minutes. Add shallots; season with salt and pepper.

These items are not on the cumming harvest site so you will have to email me the order. I plan to place the order on March 28th.

Milk is delivered on Tuesdays, and pickup is Wednesday between 1:30-2pm. I can also hold the milk for you until Saturday but the order will need to be prepaid online.
