This Week at The Cumming Harvest


New Recipe You May Enjoy

Summer Veggie Stew
This recipe was so easy and pretty healthy too. I adapted a allrecipes.com recipe called “Eggplant Supper Soup”.

Ingredients:
1 tablespoon EVOO
1 medium onion, chopped
1 pound ground beef
1 clove garlic, crushed
1 pound eggplant, diced
3/4 cup okra cut into 1/2" pieces
3/4 cup sliced celery
2 (14.5 ounce) cans Italian crushed tomatoes
28 oz chicken broth
1 teaspoon brown sugar
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon ground black pepper

Heat the oil in a skillet over medium heat, and cook the onion, beef, and garlic until beef is evenly brown. Drain grease, and mix in eggplant, celery, okra and tomatoes. Pour in broth. Mix in brown sugar, and season with nutmeg, salt, and pepper. Cook and stir until heated through.

Add in any optional starch and continue cooking on low or until done. Some have enjoyed pasta, lentils, brown rice, etc. I added a package of “Seeds of Change” brown rice and quinoa which was so easy and fast! Costco sells a box of 6.

Another option: Vermouth
We bought a huge bottle a couple of months ago because I had an idea I wanted to try a dry martini. Unfortunately, I could never make it taste good or more possibly I just don’t like dry martini’s. I believe at the time I was binge watching Mad Men and I remember thinking, they drink martini’s like apple juice, it must be really good, reminding me that nothing is like I see on TV.

Anyway, back to the reason I’m talking about Vermouth…I had heard you could cook with it so luckily when I saw that someone added vermouth into this recipe, I finally could try it. I added 1 tablespoon but probably could’ve used more as I couldn’t taste anything and if I’m going to use wine or something in a recipe I think I’d like to taste a flavor of wine ;)

This Week at The Cumming Harvest


This Week

This time of year the farmers are starting to make room for fall crops which means summer crops are coming to an end and being harvested. I usually issue a warning that nearly all of the favorite summer veggies are about to be in short supply. Once it gets really hot for long stretches, many plants just shut down flower production, and without flowers, there are no fruit. So, when the hot still days of August roll around there is often a sudden decline in tomatoes, beans, squash, peppers, and pretty much everything but okra. This year, though, we might be ok. It’s not been particularly hot, and there has been just enough rain to keep things from getting too dry. We’ll be pushing 100 degrees in the weeks ahead, no doubt, but we’re also likely to see scattered showers. If we stay lucky and the trend holds for a few more weeks, the bounty we have now just might be with us right into fall.

This Week at The Cumming Harvest


Happy Anniversary!

This week marks our 7th Anniversary operating The Cumming Harvest! My dad and I have thoroughly enjoyed every Saturday seeing all of you and look forward to more weekends meeting new customers. We’ve had several great customers volunteer with us throughout the last 7 years but none as dedicated as Susan Quackenbush and Jeanne Lee, these two ladies started volunteering soon after we opened in 2010 and have kept volunteering just about every other Saturday. They always come to my rescue and saved us so many times when one of us had to be out. Having them with us on Saturday makes our day fun and we couldn’t do it without them, or would want to! Thank you both for your friendship and time! We love you!
